You interpreted the instructions correctly and copying the Info.plist file using Finder is perfectly fine.

I haven't encountered this error before and I also haven't tried to set up multiple targets on an app built with Metro (although I don't think using Metro should cause any problem here), but if you say it happens when building the app from the command line using Metro then I'd recommend trying to build it from Xcode directly and see if that works. React Native can be pretty silly sometimes...
